vegan chocolate chip cookie

INGREDIENTS:

* 2-1/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 cup Earth Balance*, softened (although Earth Balance is the best, you may use any other non-dairy butter/margarine)
* 3/4 cup granulated [white] sugar
* 3/4 cup packed brown sugar
* 1 teaspoon vanilla extract
* Egg Replacer for 2 eggs**
* 2 cups (12-ounce package) semi-sweet chocolate chips
* 1 cup chopped nuts (optional)

*Earth Balance can be found at Whole Foods, Lakeshore Natural Foods, and other natural health food stores.

**ENER-G Egg Replacer is a brand-name powder mixture of vegetable starches that simulates eggs in baking. It can be used in recipes calling for unbeaten eggs, egg whites beaten stiff, and egg yolks. It can be found at Whole Foods as well as natural health food stores.

***organic, CHOCOLATE CHIPS (Tropical Source makes the best chocolate chips. They are organic and use unrefined sugar. You can also find these in most health food markets, or ask them to order them for you if they don't).

INSTRUCTIONS:

1. Combine flour, baking soda and salt in small bowl.

2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl.

3. Add egg replacer one at a time, beating well after each addition; gradually beat in flour mixture.

4. Stir in chips and nuts.

5. Drop by rounded tablespoon onto ungreased baking sheets.

6. Bake in preheated 375-degree oven for 8 to 10 minutes or until golden brown.

7. Let stand for 2 minutes; remove to wire racks to cool completely.

i thought vegans couldnt have chocolate becaseu of milk , because it came from cows..

Use fake chocolate chips, fake eggs and soy milk, otherwise I think you can use all the same things that is the receipe, flour, sugar, baking powder.

These are really really good!

Chocolate Chip Cookies

Ingredients:

3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan margarine
1 teaspoon vanilla
1/3 cup applesauce
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
12oz bag vegan semi-sweet chocolate chips

Directions:

Heat oven to 370 Fahrenheit.

Beat sugars, margarine, vanilla, and applesauce together in a large bowl.

Stir in flour, baking soda, and salt. (Dough will be stiff).

Stir in chocolate chips.

Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown.

Cool.

Crispy Quinoa Cookies
1/2 cup honey or* 1/4 Maple Syurp-1/4 Agave Nectar
1/3 cup brown sugar
1/2 cup margarine or *coconut butter
1/2 cup peanut butter or *other nut butter,we used Cashew
1/2 tps vanilla
1 cup rice flour
3/4 cup Quinoa Flakes
1 t baking soda
1/4 t salt (optional)
1/2 cup nuts and or Vegan chocolate chips (optional) *or both

Heat oven to 350 degrees. Beat honey, brown sugar, margarine, peanut butter, and vanilla in medium bowl until creamy. Combine rice flour, quinoa flakes, baking soda, and salt in a small bowl (or just dump it all on top of the wet mixture like I did!) Add to mixture and beat until well blended. If desired add nuts and/or chocolate chips. Drop by rounded teaspoonfuls about two inches apart onto ungreased cookie sheet. Bake 12-15 minutes or until light golden brown. Cool one minute before removing from cookie sheet.

I found that they seemed to bake much faster that the time given.
