An elliptical head is made up of half of an ellipsoid and part of a cylinder. If you know the dimensions of the ellipsoid and the amount of straight flange that makes of the cylinder portion of the head then you can calculate the surface area.

With the references below, you would be able to find the necessary dimensions to make the calculation.

Take half of the surface area of the ellipsoid and add the surface area of the straight flange to get the total area. If you are not interested in the straight flange portions then do only the ellipsoid

You should be able to use this same technique to calculate a torispherical head. You will need to know the knuckle radius of the head to calculate the area of the torus portion of the head.
