Do you have the recipe for Jamie Oliver's (Jamie at Home) BBQ sauce [episode 3]?

Does anyone have the recipe for the BBQ sauce that Jamie Oliver made for his BBQ lamb, chicken and ribs in Jamie at Home - episode 3?

Jamie Oliver BBQ

meat:
thick set of pork ribs
joint of lamb
whole chicken

marinade:
4 to 5 cloves
1 tsp cumin
2 tbs fennel seeds
1 tsp black pepper
2/3 tsp salt
handful of fresh rosemary leaves
10 fresh bay leaves
bunch thyme use the tips and leaves
1 whole bulb of garlic peeled
peeled zest of an orange
4 tsp smoked paprika
half bottle of balsamic vinegar
juice of 1 orange
whole bottle of organic ketchup
olive oil.

Make marinade
bash cloves,cumin,fennel seeds,black pepper and salt in a pestle and mortar.
roughly chop herbs, garlic, orange rind. mix it all with the wet ingredients.

Meat
Make sure you score the lamb before you rub this BBQ mixture on it and cut chicken down the backbone then flatten, score the meat and rub in the marinade. Place all meats onto 2 roasting pan ( lamb in one and chicken and pork in the other) cover with foil and put into oven to roast for 1 1/4 hours on about 375F then dip into marinade again and place onto BBQ to crisp, for about 45 min. Be sure to put all the oven roasting juices into a pot to reduce, you could bring any remaining marinade to a boil and add to the pan juices too, use a rosemary bunch to mop or brush the marinade onto the meats as they crisp up

    I've just watched this on channel 4 and found myself drooling over his bbq sauce. Unfortunately, the video on his website is for a slightly different recipe : (

    He has a book coming out on the 6th Sept but if you can't wait until then, I suggest getting 4OD (http://www.channel4.com/4od/index.html?cntsrc=ppc_4od_google_4od) where you'll find the episode available to download soon. It will be free and you'll be able to watch it again. Make sure you take some notes this time! You can pause and rewind so you won't miss any details.

    I scribbled as I watched it this evening. Was along the lines of:

    Whack into the Mortar:
    Whole Cloves - 4-5
    Whole Cumin seeds - 1 teaspoon
    Whole Fennel seeds - 2 tablespooons
    Black peppercorns - 1 teaspoon
    Salt - 2 teaspoons
    Grind them up with your Pestle and bung them in the roasting pan

    Chop up:
    Garlic - 1 bulb
    Zest of 1 orange
    Rosemary - 1 handful
    Bayleaf - 10-12 leaves
    Thyme - 1 handful

    Mix it up with the spices then add:

    4 teaspoons smoked paprika
    0.5 bottle (cheap!) balsamic vinegar
    The juice of the Orange
    1 bottle (organic) ketchup
    8 tablespoons Olive Oil

    Then mix it all up with your hands!!

    Spend three weeks getting it out from under your nails.

    I'm going to try it this weekend! Yum!

    Thanks Effingpot, I was searching for that too.. I managed to write most ingredients in my mobile last night, but forgot the orange, which could've made all the difference! By the way, do you remember what cut of lamb it was? He usually goes with leg or shoulder, and was it 'butterflied' (just learned that from Jamie's Youtube site!) and was it chicken legs or?
