What are some good HOT weather meals?

When it is 105 I don't really feel much like cooking. it is just me and my husband so last night I got deli meats and chips and potato salad and it was really good.

What is something you serve for dinner when it is just too hot to cook?

My favorite which defys the heat and takes advantage of the garden or local produce stand is:

chop 4 tomatoes, add 1/2 cup fresh basil, 1 container halved fresh mozzarella balls, 1/4 cup each of balsalmic vinegar and olive oil, salt and fresh pepper - mix all together and let sit to meld flavor for about an hour. Add cooked pasta ( yep- you have to cook the spagetti, but it is worth it...)
Serve as a main dish or with cold chicken or turkey and fresh bread and butter.

WOW that sounds good and I will be trying it - the noodle only take like 8-10 minutes so that won't kill me!

I love this recipe. You only have to cook the shells.

Italian Chopped Salad in Shells

36 appetizers 3¼ hours 3 hours prep

1 (16 ounce) package jumbo pasta shells
4 cups chopped romaine lettuce
1/2 cup chopped fresh basil
1 cup coarsley chopped cooked chickens
1 cup coarsley chopped tomatoes
3/4 cup coarsley chopped cucumbers
3 ounces italian hard salami, chopped
1/3 cup roasted garlic vinaigrette dressing

Cook pasta shells as directed on the package.
Drain and cool.
Place remaining ingredients except vinaigrette in a medium bowl.
Pour vinaigrette over the salad, toss to coat.
Stuff the shells with the salad.
Cover and refrigerate 2 hours before serving.

Okay, so, I know you and I only live a few hours apart, so I'm feeling your pain, baby. It's hot in Missouri!

The other day, I made the BEST fun little dish (look at Mr. Gay here)! I took one of those hawaiian bread loaves and hollowed it out. Then I took:

Rotisserie Chicken
Red Seedless Grapes
Red Onions
Almonds
Granny Smith Apples
Mayonnaise

Cut it all up and mixed it up and put it in the bread bowl. Me and this boy I'm seeing just took forks and ate it and the bowl together! It was fun, COLD, easy and freakin YUMMY!

Is it too hot to boil water on the stove? No? Good!

I would recommend a nice Turkey, brie and pear slices with a smooth Honey Dijon mustard on multigrain bread served with a light tomato/cucumber italian pasta salad.

Serve with iced tea or lemonade.

My mom makes the best potato salad, and my grandma makes the best fried chicken. My mom didn't acquire domestic skills until after all the kids had moved out of the house.

When it was hot in Santo Domingo, I'd simply make cold ham sandwiches with pineapple salad and tostones (fried sliced plantains). Wash that down with Presidente cerveza.
