YEAST FREE PIZZA CRUST & HOMEMADE
PIZZA
CRUST:
2 c. flour
1 tsp. salt
2 tsp. baking powder
2/3 c. water
1/4 c. vegetable oil
PIZZA:
Tomato sauce
Ground pork or hamburger, browned
Chopped onion
1/2 tbsp. pizza seasoning
Mushrooms
Shredded pizza cheese
Mix flour, salt, baking powder and water. Knead on floured counter just until workable and spreadable, about 2 minutes. Put on pizza pan, with fingers spread vegetable oil on crust (helps so tomato sauce won't soak in crust) then put tomato sauce on, then meat of your choice, then pizza seasoning, next put on mushrooms and cheese on top. Bake at 425 degrees for 20 minutes. This pizza seasoning can be bought, it has all your dried spices all together and you just sprinkle it on.
Sourdough Pizza Dough - uses sourdough starter
In a bowl with plenty of room for rising, mix together
1/2 cup starter (sourdough starter)
2 cups warm water
2 1/4-2 1/2 cups flour
Let stand in warm place 4 hours until foamy (eg.put it covered in the oven with the light left on, and use a glass bowl and plastic wrap)
Remove your 1/2 c of starter and put in refrigerator for, well you know.
to batter add:
1 tsp baking soda (mix it in well before adding the rest of ingredients)
1 tsp salt
2 cups flour
mix in as well as possible in bowl, then knead 10-15 times on floured bowl (it will be sticky when you start)
Let rest 15 - 30 minutes, then cut dough in half and spread each half on/in a greased cookie sheet. Remember to make your edges to hold in your ingredients.
Add your toppings, spices, herbs, pickles, whatever.
Bake at 375-400 degrees F. (Don't know C) for 15 minutes, or until cheese melts (if your using it). If this temperature doesn't work for you, experiment. I like to make thick crust pizzas with this and it takes a bit longer to cook (25 min)
NO Yeast Pizza Dough
1 1/2 cups each all-purpose flour and whole wheat flour
1/4 cup cornmeal
2 tsp baking powder
1 tsp salt
1 1/2 cups water (sometimes takes a little more--I don't know why)
Combine the dry ingredients first, add the water, then mix together. When it's at the right consistency, the dough will easily come away from the side of the bowl and form a ball. Press onto a non-stick cookie sheet or pizza pan (I like to brush it with olive oil). Bake the crust first for 10-15 minutes in a 400 degree oven. Then add any toppings you like and bake approximately another 15 minutes. (For a little extra kick - your favorite herbs or spices can be mixed into the dough also - and it makes delicious breadsticks for dipping.)
