I very rarely fry food. It always tastes synthetic and is very high in fat. I tend to brush things with a very light coating of Extra Virgin Olive Oil and then put it under the grill, low and slow.
Much better tasting and much lower in fat.

I don't fry much, but when I do I use sunflower oil and add olive oil if I want the flavour.

Baking, grilling, stewing, griddling requires only a tiny bit of oil on the surface, or you can dry fry on a non stick pan - whatever it is you are cooking will release its own juices.
Steaming is another way - particularly good for fish and vegetables.

i have a steam pan. you put water in the bottom and the grill goes on top. you heat it up and put the food on. you don't need oil and the steam keeps meat from drying out. yum.

Honestly, none. When a recipe calls to fry something, I always fry it. I've tried (french fries, for example) baking them, but they're not nearly as good. I just fry what should be fried. I don't do it often though because (obviously!) it's fried. :)

To reduce the fat I use a frying spray I use whatever oil I like but use my oil sprayer its great. I also use it when oil is required in the oven - roast potatoes .

I fix "fried chicken" in the oven. Oven fried chicken is just as good as pan fried chicken, and it only takes a small amount of oil.
Easy oven fried chicken recipe.
INGREDIENTS:
3 to 4 pounds chicken parts
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup butter or margarine
PREPARATION:
Directions for oven fried chicken recipe
Preheat oven to 425°.
Wash chicken and pat dry with paper towels. In a pie pan, combine flour, paprika, salt and pepper. Coat chicken with the flour mixture.
Put butter in a shallow baking pan; place in oven to melt.
When butter is melted, arrange chicken in the baking pan in a single layer, skin side down. Bake at 425° for 30 minutes; turn and bake 15 minutes longer, or until chicken is tender and done. Oven fried chicken recipe serves 4.

Use less fat and oil in your cooking, use instead :
A gridle pan.
A remoska cooker.
Bake it instead.

I use Fry light its 1 cal per spray, i use it to do dry roast potato's roast veg, also use it for frying eggs, or sweating off onions and garlic. Also use it to make low calorie chips, prepare your chip put in a pan of boiling water for a few minutes, drain, put on a sprayed baking tray spray the chips and sprinkle with salt bake in hot over for 30Min's turning the chips half way through the cooking time, if you wanted to instead of the salt sprinkle some other seasoning, they are really good and less than half the calories of normal chips
