The most $ per acre can be made with herbs. Many herbs are hardy, require little care or extra water, and can be grown organically. Contact upscale restaurants and specialty grocery stores about what they would like to have and prices thay are willing to pay. Also, if there are farmers' markets in the area (or even in San Francisco if not too far) that may be a good place to sell your crops. There are existing herb farms in the bay area you could visit and use as sources of information and plants - see links below.
For most herbs, you'll want to determine which varieties will both grow well and sell in your area. Some to check into include various basils, oreganos, and marjorams; unusual mints; borage; chamomile; sorrel; dills; fennels; and of course gourmet parsleys and cilantros; garlic chives; rosemary; and several types of lavender.
