Here is a banana bread recipe from "Fat Free, Full Flavor." Add spices and nuts if you wish.

Change to: loaf US Metric
6 ripe bananas
1 cup sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Mash the bananas, sugar and vanilla together.
Sift the flour, baking powder and soda together.
Mix the liquid with the dry and pour into a 7.5 x 3.5 x 2 inch loaf pan.
Put into a preheated oven at 350 F for one hour.

    Banana is actually a good substitute for egg and holds breads/cakes together, so eggs are not needed in banana bread. Here's my recipe for a basic banana bread. You can add nuts, raisins, coconut, etc., if desired.

    6 bananas (a little over-ripeness is best)
    1/2 cup light brown sugar
    1/2 cup white granulated sugar
    2 teaspoons vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda

    *Note: Self-rising flour can be used, but omit the baking powder and baking soda.

    1. Mash the bananas, sugars and vanilla extract together.
    2. Sift the flour, baking powder and baking soda together.
    3. Mix the liquid with the dry ingredients and pour into a loaf pan.
    4. Bake in a preheated 350 degree Fahrenheit oven for approximately 1 hour or until a toothpick inserted into the center of the bread comes out clean.
