Why does honey crystalize on bread?

I've been eating waffles with honey a lot lately, and when I pour the honey on my waffle, within a matter of minutes it's hardened and crystalized. I don't think it has to do with the heat of the waffles, because it does that on cold bread too.

It's just the basic honey in a bear-shaped bottle... I've had it crystalize in the bottle before too, but this is completely different.

It could be that the moisture in the honey is 'soaking' into your waffles. I have noticed similar effects using honey on white bread.
Dextrose, a major sugar in honey, can spontaneously crystallize from any honeys in the form of its monohydrate. This sometimes occurs when the moisture level in honey is allowed to drop below a certain level.
