Southern Bread Pudding with Bourbon Sauce

True comfort food for any Southerner.

6 servings 1¼ hours 25 min prep
pudding
3 cups stale French bread, cut in 3/4 inch cubes
2 cups milk
2 eggs
1 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 tablespoons butter, melted and slightly cooled
sauce
2 egg yolks
1/2 cup butter, not margarine
1 cup sugar
1/3 cup bourbon, to taste

--pudding--.
Preheat oven to 350 degrees F.
Place stale bread in a bowl with milk and squeeze the bread with your hand until well saturated with milk.
With an electric mixer on high speed in a separate bowl, beat eggs with sugar until thick and pale.
Stir in the vanilla, cinnamon, nutmeg and butter.
Add the soaked bread crumbs to the egg mixture and stir well.
Let stand for 10 minutes.
It is important to allow enough time for the bread to absorb the egg mixture or the bread crumbs will float to the top during baking, leaving a layer of custard on the bottom of the dish.
Transfer the mixture to a greased baking dish.
Bake until firm, or until a knife inserted in the middle comes out clean, about 45 to 50 minutes.
Allow to cool.
--sauce--.
With an electric mixer, beat egg yolks until thick and pale.
In a saucepan, melt the butter and sugar.
Pour the butter and sugar mixture over the egg yolks, beating constantly with the mixer, until well thickened.
Stir in bourbon by hand.
Serve over slightly cooled bread pudding.

There are no copycat recipes for anything that comes out of that greasy, dirty hole in the ground.

    1 Bagel
    2 Eggs
    1 cup Milk
    2 tablespoons Cinnamon sugar*
    1 tablespoon Raisons
    1 tablespoon Chocolate chips
    TO MAKE CINNAMON SUGAR MIX
    2 tablespoons Sugar with
    1 teaspoon Cinnamon

Tear bagel into bite size pieces. Put bagel into baking dish. Sprinkle chips and raisins over bagel and stir. Crack eggs into a small bowl. Add milk and 1 tablespoon of cinnamon sugar. Beat with wire whisk. Pour mixture over bagel. Cover dish with plastic wrap. Put in refrigerator overnight. On Christmas morning, see if Santa has come. Take plastic wrap off of dish. Heat oven to 350". Put bread pudding into oven. Set timer to 45 minutes. Test to see if pudding is done by sticking knife into pudding, and if it comes out clean and is brown and puffy, it is done. Cool 10 minutes before eating Posted to recipelu-digest Volume 01 Number 171 by KJAlbums@aol.com on Oct 27, 1997
