When growing like dill and celantro how tall will they have to grow before I can cut and use them?

this is my first time of growing and accidently threw away the package.they are both about 8 inches tall.

You can start picking the leaves from dill at any stage. If you are making pickles you will want to pick the seed heads before the flowers open or after they start making seed. But the leaves are very flavorful to use any time.
As for the celantro I would think that as soon as they make leaves large enough to harvest.

6 inches and bushy

My dill comes up to my waist.

My cilantro is only about a foot tall.
