What is the best resume type to go with?

I know it depends on the field. (I am a consultant.)

For a consultant, I would go with the drawn out lengthier resume. Focus on functional areas of expertise.

Simple and concise. Keep the other one if they request a followup or further information.

Simple, concise----use quadrants with boarders as would be done on an advertisement. Each section corresponding with a catagory i.e., education, experience, leadership qualities etc.
