How tall should artichoke plants be?

I have two articoke plants that are over 5 1/2 feet tall. I have been fertilizeing them with 'Ironrite'. The actual articoke is small but eatable. When or is it okay to cut plant to the ground, when done with chokes.?

You might have been using too much nitrogen; that would make the vegetation grow at the expense of the hearts.
